Ingredients

  • 2 eggs
  • Juice of 1 lemon
  • Grated zest of 1 lemon
  • 40g (1/4 cup) plain flour
  • 60g butter, melted and cooled
  • 200g sweetened condensed milk
  • 125ml (1/2 cup) milk
  • Lemon curd, to serve, optional
  • Whipped vanilla cream or thick vanilla yogurt, to serve, optional

Method

  • Step 1
    Grease and flour a 6 x 1/4 cup capacity silicone mini muffin pan.
  • Step 2
    Use electric beaters to beat the ingredients in a large bowl for 60-90 seconds.
  • Step 3
    Pour into prepared pan. Air fry at 160°C for 6 minutes. Leave to cool for 1 minute. Turn onto a plate and repeat with remaining mixture to make 24 pies.
  • Step 4
    Serve with a little dollop of whipped vanilla cream or yogurt and lemon curd, if desired.
