Want to know how to air fry cakes? These light little lemon impossible pies are so easy to make - simply mix ingredients like sweetened condensed milk, lemon curd, flour and eggs then 'bake' in your appliance to make the ultimate quick dessert.
Ingredients
- 2 eggs
- Juice of 1 lemon
- Grated zest of 1 lemon
- 40g (1/4 cup) plain flour
- 60g butter, melted and cooled
- 200g sweetened condensed milk
- 125ml (1/2 cup) milk
- Lemon curd, to serve, optional
- Whipped vanilla cream or thick vanilla yogurt, to serve, optional
Method

Step 1Grease and flour a 6 x 1/4 cup capacity silicone mini muffin pan.

Step 2Use electric beaters to beat the ingredients in a large bowl for 60-90 seconds.

Step 3Pour into prepared pan. Air fry at 160°C for 6 minutes. Leave to cool for 1 minute. Turn onto a plate and repeat with remaining mixture to make 24 pies.

Step 4Serve with a little dollop of whipped vanilla cream or yogurt and lemon curd, if desired.
