How to make these air fryer brie and cranberry filo Santa sacks recipe
You can prepare these golden Santa sacks ahead of time and cook them in batches (depending on the size of your air fryer). The sacks can be assembled up to 3 hours ahead – just store them in the fridge until you're ready to air fry them. Remember, filo pastry can dry out quickly, so keep unused sheets under a slightly damp tea towel and work briskly. Be sure you don’t overcrowd the air fryer basket. Cook in a single layer with space between sacks so the hot air can crisp every fold. If you have any leftovers, recrisp at 160°C for 3-5 minutes.

What goes into my air fryer brie and cranberry filo Santa sacks recipe?
We start with filo pastry, and melted butter, and fill our Santa sacks with brie, melty mozzarella, and a little cranberry sauce. Swap the cranberry sauce for fig paste, quince paste or caramelised onion chutney. Then, we tie a little chive string around the sack. You can omit the chive tie garnish but they look fun!

Ingredients
- 12 sheets filo pastry
- 80g butter, melted
- 200g brie, cut into 12 wedges or cubes
- 100g piece mozzarella, cut into 12 cubes
- 1/4 cup cranberry sauce
- 12 chives
Method

Step 1Lay a sheet of pastry on a board or bench. Brush with butter. Top with a second sheet and brush this with butter. Use a sharp knife to cut into quarters. Place one quarter perpendicular across another quarter to create a cross shape. Repeat with second pair of quarters.

Step 2Place a piece of brie on one of the filo stacks. Top with 1 tsp of cranberry and press a cube of mozzarella into that. Gather up the corners of the filo to create a sack, pressing the pastry together at the top to seal. Repeat with second stack of pastry to create a second sack.

Step 3Repeat with remaining ingredients to create 12 sacks in total. Brush the outside of each sack with any remaining melted butter. Place in air fryer basket, in batches, and cook at 200°C for 8-10 minutes until golden.

Step 4Soak chives in a bowl of boiling water for 2 minutes to soften. Drain and pat dry. Use chives to tie a ‘bow’ around the top of each Santa sack. Serve.
