Bring back this retro stuffed egg recipe to dinner parties, barbecues and picnics.
Ingredients
- 6 eggs
- 1 tbs vinegar
- 2 tbs mayonnaise
- 1 tsp Dijon mustard
- Pinch of cayenne pepper *to serve
Method

Step 1In a pot, add the eggs into cold water. Add the vinegar and bring to the boil. Boil the eggs for 7 minutes.

Step 2Drain the eggs immediately and place in a bowl in the sink and run under cold water. Allow to sit for several minutes to cool.

Step 3Once cooled, peel the eggs and cut lengthways.

Step 4Gently scoop out the cooked yolks. Blend in a food processor or pass the yolks through a sieve. Stir in the mayonnaise and mustard.

Step 5Place the yolk mixture into a piping bag and pipe into the cooked egg whites. Sprinkle with cayenne pepper and serve.
Recipe Notes
You may want to cook a few extra eggs just in case a few don't peel so well.
