Ingredients

  • 6 eggs
  • 1 tbs vinegar
  • 2 tbs mayonnaise
  • 1 tsp Dijon mustard
  • Pinch of cayenne pepper *to serve

Method

  • Step 1
    In a pot, add the eggs into cold water. Add the vinegar and bring to the boil. Boil the eggs for 7 minutes.
  • Step 2
    Drain the eggs immediately and place in a bowl in the sink and run under cold water. Allow to sit for several minutes to cool.
  • Step 3
    Once cooled, peel the eggs and cut lengthways.
  • Step 4
    Gently scoop out the cooked yolks. Blend in a food processor or pass the yolks through a sieve. Stir in the mayonnaise and mustard.
  • Step 5
    Place the yolk mixture into a piping bag and pipe into the cooked egg whites. Sprinkle with cayenne pepper and serve.
Recipe Notes

You may want to cook a few extra eggs just in case a few don't peel so well.
