These yummy mini Anzac puddings have only four ingredients - blitz them up in the food processor and they’ll be baked and ready to serve in 15 minutes. - Greer Worsley

Ingredients

  • 300g ANZAC biscuits
  • 1/2 cup condensed milk
  • 80g butter, melted
  • 2 eggs

Method

  • Step 1
    Preheat oven to 180C. Grease six cups of a regular muffin tin.
  • Step 2
    In a food processor, blitz biscuits to form a fine crumb. Add remaining ingredients and blitz into a thick batter. Pour a little less than 1/2 cup of batter into each muffin cup. Bake for 12-15 minutes until golden and set, but still a little runny on the inside. Serve hot.
Recipe Notes

Serve drizzled with golden syrup or with a scoop of vanilla ice-cream.

Use store-bought Anzac biscuits from the biscuit aisle in the supermarket.
