These yummy mini Anzac puddings have only four ingredients - blitz them up in the food processor and they’ll be baked and ready to serve in 15 minutes.
Ingredients
- 300g ANZAC biscuits
- 1/2 cup condensed milk
- 80g butter, melted
- 2 eggs
Method

Step 1Preheat oven to 180C. Grease six cups of a regular muffin tin.

Step 2In a food processor, blitz biscuits to form a fine crumb. Add remaining ingredients and blitz into a thick batter. Pour a little less than 1/2 cup of batter into each muffin cup. Bake for 12-15 minutes until golden and set, but still a little runny on the inside. Serve hot.
Recipe Notes
Serve drizzled with golden syrup or with a scoop of vanilla ice-cream.
Use store-bought Anzac biscuits from the biscuit aisle in the supermarket.
