These simple 3-cheese mini loaves are the perfect for kids' lunchboxes. Plus, you can make a batch and freeze them for later.
Ingredients
- 300g (2 cups) self-raising flour
- ½ tsp paprika
- 75g unsalted butter, melted, cooled
- 1 egg, lightly whisked
- 80g Greek-style yoghurt
- 250ml (1 cup) milk
- 40g (½ cup) finely grated parmesan
- 75g feta, cut into 1cm cubes, plus extra 40g
- 90g (¾ cup) grated cheddar
- Butter, to serve

Step 1Preheat oven to 170°C fan-forced.

Step 2Mix flour, paprika and ½ tsp salt flakes together in a large bowl. Season generously with freshly ground black pepper.

Step 3Whisk melted butter, egg, yoghurt and milk together in a jug. Add to flour mixture and stir gently until just combined (it’s fine if a few small pockets of flour are remaining). Add parmesan, feta and 60g cheddar. Mix until just combined. Divide among 12 mini-loaf or muffin holes. Top with extra feta and remaining cheddar.

Step 4Bake for 25 minutes or until golden. Cool in pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature with butter.
