Keto-Friendly Whole Baked Snapper with Nuoc Cham

Ingredients

  • 1 whole snapper gutted large scaled
  • 2 spring onions chopped *to garnish
  • 2 lemons halved
  • 1 bunch coriander fresh
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1 handful green salad leaves
  • 1/2 punnet medley cherry tomatoes quartered

Dressing

  • 1 red chilli finely chopped small
  • 1 garlic clove finely chopped
  • 1 tbs ginger finely chopped
  • 1 tbs fish sauce
  • 1 tsp honey
  • 2 limes juiced

Method

  • Step 1
    Preheat the oven to 190C.
  • Step 2
    Line a baking tray with baking paper.
  • Step 3
    Pat the snapper dry using paper towel.
  • Step 4
    Place the coriander inside the cavity of the fish.
  • Step 5
    Place the lemon halves in the baking tray with the fish.
  • Step 6
    Pop in the oven for 20 minutes or until cooked through (times vary depending on size of the fish.)
  • Step 7
    Combine all the ingredients for the dressing in a small glass jar and shake vigorously. Set aside.

    In a mixing bowl, combine the mixed green leaves and cherry tomatoes.
  • Step 9
    Once the fish is cooked, remove the heat and allow to rest for 5 minutes.
  • Step 10
    Sprinkle the shallots over the fish and serve with the salad and dressing .
