Ingredients
- 1 whole snapper gutted large scaled
- 2 spring onions chopped *to garnish
- 2 lemons halved
- 1 bunch coriander fresh
- 1 pinch sea salt
- 1 pinch black pepper
- 1 handful green salad leaves
- 1/2 punnet medley cherry tomatoes quartered
Dressing
- 1 red chilli finely chopped small
- 1 garlic clove finely chopped
- 1 tbs ginger finely chopped
- 1 tbs fish sauce
- 1 tsp honey
- 2 limes juiced
Method

Step 1Preheat the oven to 190C.

Step 2Line a baking tray with baking paper.

Step 3Pat the snapper dry using paper towel.

Step 4Place the coriander inside the cavity of the fish.

Step 5Place the lemon halves in the baking tray with the fish.

Step 6Pop in the oven for 20 minutes or until cooked through (times vary depending on size of the fish.)

Step 7Combine all the ingredients for the dressing in a small glass jar and shake vigorously. Set aside.

Step 8In a mixing bowl, combine the mixed green leaves and cherry tomatoes.

Step 9Once the fish is cooked, remove the heat and allow to rest for 5 minutes.

Step 10Sprinkle the shallots over the fish and serve with the salad and dressing .
