Try this delicious and healthy recipe featuring turkey breast fillets.
Ingredients
- 2 Steggles turkey breast fillets
- 1 Spanish onion large
- 1/3 cup olive oil
- 2 bunch broccolini cut in half trimmed
- 8 pitted dates sliced
- 80 g toasted flaked almonds
- 2 tbs lemon juice
- 1 clove garlic crushed
- 1/4 cup olive oil
Method

Step 1Toss the onion together with one tablespoon of oil in a bowl, season with salt and pepper. Scatter over a baking tray and bake in 200C preheated oven for 15-20 minutes until golden. Stir half way through. Set aside to cool.

Step 2Bring a large pan of water to the boil and cook broccolini until just tender, drain and refresh under cold water. Toss the cooled broccolini in a bit of oil and cook on a lightly greased BBQ or grill pan over medium high heat for about 2 minutes each side or until just warmed through. Transfer to a serving platter.

Step 3Cook steaks on same grill pan for about 2 minutes each side or until just cooked through. Toss the onions, dates and half the almonds through the broccolini.

Step 4Whisk together the lemon juice, garlic and remaining oil and pour over salad. Scatter over remaining almonds and serve with steaks.
