Turkey and Cranberry Mini Quiches

I made this recipe up about 4 years ago as a nice Christmas version to my usual bacon mini quiches. I have made them every Christmas since, and they have been a huge hit with my family, friends and colleagues. - MissHollywood23

Ingredients

  • 500 g turkey roast diced
  • 1 onion large finely diced
  • 2 cups mozzarella grated
  • 1/2 cup cranberry sauce
  • 4 eggs beaten
  • 4 sheets puff pastry frozen

Method

  • Step 1
    Preheat oven to 180C and lightly grease a shallow mini quiche or cupcake tray.
  • Step 2
    In a large frypan, slowly fry diced turkey and onion on a moderate heat until fragrant and onion is soft.
  • Step 3
    Take pan off the heat and add grated cheese. Allow to melt and combine.
  • Step 4
    Add cranberry sauce and combine. Allow to cool a little.
  • Step 5
    Add eggs and stir until combined.
  • Step 6
    Use a round cookie/scone cutter to cut enough rounds to fill each hole in the tray.
  • Step 7
    Fill each round of pastry with approximately 1 teaspoon of the mixture.
  • Step 8
    Bake for approximately 15 minutes or until lightly golden.
  • Step 9
    Repeat with remaining pastry and mixture.

Equipment

  • 3 12-hole cupcake pan
Recipe Notes
These are also great for storing in the freezer to use when unexpected guests come around. They will last for up to 3 months and all you need to do is reheat them in the microwave for a minute or two, or for a crispier flakey pastry in the oven for 5-10 minutes.
