Ingredients

  • 2 tbs instant coffee powder
  • 1/3 cup boiling water
  • 2 tbs Tia Maria
  • 400 g condensed milk
  • 600 ml cream
  • 12 Savoiardi sponge finger biscuits
  • 1/4 cup milk

Method

  • Step 1
    Combine coffee, water and Tia Maria and set aside until cool.
  • Step 2
    Combine condensed milk and cream in a large bowl and beat with an electric mixer until thick.

  • Step 3
    Beat in half the coffee mixture.
  • Step 4
    Combine remaining coffee mixture with milk and brush well over both sides of the sponge biscuits.
  • Step 5
    Line a 20cm square cake pan with foil and spoon half the cream mixture into the pan.
  • Step 6
    Top with biscuits and remaining cream mixture. Freeze until set.

You can use any coffee liqueur.
