Ingredients

  • 150 g dried strawberries
  • 2 cups self-raising flour
  • 1/2 cup sugar
  • 1 cup desiccated coconut
  • 185 g butter melted

Method

  • Step 1
    Soak strawberries in hot water for 30 minutes and then drain.
  • Step 2
    Add all ingredients and mix well.

    Press into slice tin and bake at 180C for 20 minutes.
  • Step 4
    Once cool, ice with pink icing if desired.
Recipe Notes

I prefer to use pink desiccated coconut.

If you can't find dried strawberries, use fresh.

Editor's note: To make the pink icing like the Best Recipes team, use 1 1/2 cups sifted icing sugar,
2 tablespoons lemon juice and pink food colouring.

Place the icing sugar and lemon juice in a bowl and mix well until smooth. Add a drop of the colouring and mix to combine.

Pour over cooled slice and place in the fridge for 30 minutes to set. Slice and serve.
