A simple slice for the lunch box.
Ingredients
- 150 g dried strawberries
- 2 cups self-raising flour
- 1/2 cup sugar
- 1 cup desiccated coconut
- 185 g butter melted
Method

Step 1Soak strawberries in hot water for 30 minutes and then drain.

Step 2Add all ingredients and mix well.

Step 3Press into slice tin and bake at 180C for 20 minutes.

Step 4Once cool, ice with pink icing if desired.
Recipe Notes
I prefer to use pink desiccated coconut.
If you can't find dried strawberries, use fresh.
Editor's note: To make the pink icing like the Best Recipes team, use 1 1/2 cups sifted icing sugar,
2 tablespoons lemon juice and pink food colouring.
Place the icing sugar and lemon juice in a bowl and mix well until smooth. Add a drop of the colouring and mix to combine.
Pour over cooled slice and place in the fridge for 30 minutes to set. Slice and serve.
