This is the tastiest and easiest soup I have ever made. Everyone I have made it for loves it and they all come back for more...yummo!
Ingredients
- 1 tsp oil
- 1 onion finely diced
- 1 tsp ginger grated
- 1 tsp garlic minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 cup red lentils dried
- 1L Massel* Vegetable Liquid Stock
- 425 g diced tomatoes
- 1 lemon juiced

Method

Step 1Heat oil in pan, add onion, ginger, garlic, turmeric, cumin and coriander. Cook for a few minutes until fragrant.

Step 2Add lentils and stir to coat. Add stock and tomatoes.

Step 3Bring to the boil then simmer for 25 minutes or until lentils are cooked.

Step 4Stir in lemon juice and serve.
Recipe Notes
You can also add a little cayenne pepper or chilli if desired, but not necessarily needed.
The lemon juice really makes a difference so even if you're not a fan, try adding a little at a time to taste.
