Ingredients

  • 250 g soba noodles
  • 1/4 cup fried Asian shallots
  • 1/4 cup coriander chopped
  • 1 carrot grated large
  • 200 g snow peas blanched
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 3 tbs rice vinegar
  • 3 tbs toasted sesame seeds

Method

  • Step 1
    Cook soba noodles according to instructions on packet and leave to cool.
  • Step 2
    Combine shallots, coriander, carrot, snow peas, sesame seeds in a bowl with the cooled soba noodles.

  • Step 3
    In a separate bowl, combine soy sauce, honey and rice vinegar, taste and adjust as desired.
  • Step 4
    Pour dressing over soba noodles, toss and serve.
Recipe Notes

Each brand of soy sauce, honey and rice vinegar are different in taste - I highly recommend checking the seasoning of the dressing prior to pouring over the salad.
