Knock mum's socks off with these delicious chocolate-y pancakes for Mother's Day.
Ingredients
- 2 1/2 cups plain flour
- 1/2 cup cocoa powder
- 3 tbs baking powder
- 4 tbs sugar
- 1/2 tsp salt
- 2 1/2 cups milk
- 2 eggs
- 1 tbs vanilla essence
- 4 tbs butter melted
- 2 tbs marshmallows *to decorate
- 1 tbs choc chips *to decorate
- 1 chocolate sauce *to decorate
- 1 knob butter *extra for frying
Method

Step 1Mix the flour, baking powder, sugar, cocoa and salt together in a big bowl.

Step 2In a smaller bowl, mix together milk, eggs and vanilla.

Step 3Add the wet ingredients to the dry and mix gently until just combined.

Step 4Add the melted butter and mix until just incorporated.

Step 5Melt a couple teaspoons butter in a non-stick frying pan over medium-high heat.

Step 6Pour about a ¼ cup of pancake batter into the pan for each pancake.

Step 7Cook until you see little bubbles forming in the batter then flip them and cook for 3-4 minutes.

Step 8Decorate with marshmallows, chocolate chips, plus your choice of chocolate sauce, cream or syrup.
Recipe Notes
Use extra butter to fry pancakes.
