If you're a Brussels sprouts fan you'll love this recipe. If not – we think it might convert you! Roasting is one of the best ways of preparing Brussels sprouts and we've taken them up a notch in this recipe with a sprinkling of salty parmesan cheese.
Ingredients
- 1 kg Brussels sprouts halved
- 1 lemon
- 1 1/2 tbs olive oil
- 4 garlic cloves thinly sliced
- 2 tbs parmesan finely grated
Method

Step 1Preheat oven to 200C or 180C fan-forced.

Step 2Place sprouts on a large roasting tray.

Step 3Peel lemon with a vegetable peeler and add peel to sprouts.

Step 4Season and drizzle with oil. Toss to coat. Roast for 10 minutes. Add garlic and roast for 15 minutes or until golden.

Step 5Squeeze lemon (you need 1 tablespoon of juice). Drizzle sprouts with juice

Step 6Serve sprinkled with parmesan.

Omit the parmesan for a vegan side.
How do you prepare Brussels sprouts before roasting?
Depending on the freshness of your sprouts, you may want to remove any outer leaves if they are not looking bright green and fresh. You can also trim the bottom of the sprouts if you like, then halve the sprouts or cut into quarters if large.
I've roasted sprouts before and they went soggy. How can I avoid this?
If your roasted Brussels sprouts have turned soggy, that means you've overcooked them. Stick to the cooking time in the recipe – when done, they should still have a little bite to them.
