The combination of tender chicken in a creamy tomato sauce, with hints of coriander and lemon giving it an extra tangy taste, all you need to say is that it is divine - simple as that. This quick recipe allows you to create the nation's favourite in a flash. It uses Tikka Masala Cooking Sauce, meaning the spices, cream and tomato are already blended for you. A few extras are also added to sharpen up the taste even more, but the sauce tastes equally great on its own.
Ingredients
- 500 g chicken pieces diced
- 1/2 red onion thinly sliced
- 6 cherry tomato quartered
- 500 g Patak's tikka masala simmer sauce
- 1 tbs vegetable oil
- 1/2 lemon juiced
- 1 pinch salt *to taste
- 1 pinch sugar *to taste
- 1 tbs coriander chopped

Step 1Heat the oil in a pan and fry the red onions or shallots for 2 minutes.

Step 2Add the chicken and allow to seal for a few minutes.

Step 3Add the tomatoes and the Patak’s Tikka Masala simmer sauce.

Step 4Cover and leave to cook through for 15 minutes, stirring occasionally.

Step 5Taste and adjust the seasoning with salt, sugar and lemon juice.

Step 6Serve simply with fresh hot basmati rice and sprinkle with coriander.
Recipe Notes
Substitute red onion with 2 shallots, finely diced. Lemon juice optional.
