Goes down well with the kids and adults. Very light and great to have after a rich meal.
Ingredients
- 1 tbs gelatine powder
- 1 cup water
- 2 tbs plain flour
- 3/4 cup sugar
- 1/2 cup fresh orange juice
- 2 tbs fresh lemon juice
- 6 passionfruit
- 2 egg whites
Method

Step 1Sprinkle gelatine over ¼ cup of water, and dissolve over hot water.

Step 2Blend flour with a little of the remaining water.

Step 3Combine in saucepan with remaining water and sugar.

Step 4Stir over heat until mixture boils and thickens.

Step 5Remove from heat and cool slightly.

Step 6Stir in dissolved gelatine, orange juice and lemon juice, and mix well.

Step 7Pour mixture into large bowl of electric mixer and beat on low speed.

Step 8When just beginning to thicken, beat on medium speed until mixture is thick and foamy.

Step 9Stir in passionfruit pulp.

Step 10Fold in firmly beaten egg whites.

Step 11Pour into serving dish.

Step 12Refrigerate until set.
