Ingredients

  • 1 tbs gelatine powder
  • 1 cup water
  • 2 tbs plain flour
  • 3/4 cup sugar
  • 1/2 cup fresh orange juice
  • 2 tbs fresh lemon juice
  • 6 passionfruit
  • 2 egg whites

Method

  • Step 1
    Sprinkle gelatine over ¼ cup of water, and dissolve over hot water.
  • Step 2
    Blend flour with a little of the remaining water.
  • Step 3
    Combine in saucepan with remaining water and sugar.
  • Step 4
    Stir over heat until mixture boils and thickens.
  • Step 5
    Remove from heat and cool slightly.
  • Step 6
    Stir in dissolved gelatine, orange juice and lemon juice, and mix well.
  • Step 7
    Pour mixture into large bowl of electric mixer and beat on low speed.
  • Step 8
    When just beginning to thicken, beat on medium speed until mixture is thick and foamy.
  • Step 9
    Stir in passionfruit pulp.
  • Step 10
    Fold in firmly beaten egg whites.
  • Step 11
    Pour into serving dish.
  • Step 12
    Refrigerate until set.
