Light and moist, yet rich and very flavoursome.
Ingredients
- 120 g butter
- 1/2 cup raw sugar
- 2 eggs
- 1/2 cup milk
- 1/2 cup sour cream
- 1 orange juiced zested
- 2 cups self-raising flour
- 1/4 tsp baking soda
- 1 tbs berry jam optional
- 1 olive oil spray for greasing
Method

Step 1Preheat oven to 200C and prepare muffin tray with oil spray or papers.

Step 2Cream the butter and the sugar.

Step 3Beat in the eggs, milk, sour cream, rind and juice.

Step 4Fold in sifted flour and baking soda, and spoon into greased muffin pans.

Step 5Drop ½ teaspoon of berry jam into the top of each muffin and push down a little into the mix.

Step 6Bake for 20 minutes, or until a skewer comes out clean

- 1 12-hole muffin pan
Recipe Notes
Eat them while still warm. Freeze in an airtight contained once cool.
The berry jam goes well with the citrus flavours, but isn't necessary for total enjoyment of this yummy muffin.
I also used the base recipe for herb and feta muffins and it was really successful.
