Ingredients

  • 1 tbs olive oil
  • 1 brown onion diced
  • 1 garlic clove crushed
  • 1 pinch chilli powder
  • 1 tsp dried oregano
  • 23 g taco seasoning
  • 500 g chicken breast fillet diced
  • 420 g canned kidney beans drained rinsed
  • 1/2 capsicum chopped deseeded
  • 400 g canned diced tomato
  • 3 tbs tomato paste
  • 4 cups rice steamed *to serve
  • 2 cups corn chip *to serve
  • 1 cup sour cream *to serve

Method

  • Step 1
    Heat olive oil in frying pan over medium heat. Add onion, garlic, chilli, oregano and taco seasoning. Cook, stirring for 2-3 minutes or until soft.

    Increase heat to high. Add chicken and cook for 3 minutes or until browned.
  • Step 3
    Reduce heat to medium-low. Add capsicum, beans, tomato paste and tomatoes.
  • Step 4
    Stir, cover and cook for about 15 minutes or until sauce has thickened slightly and chicken is cooked through.
  • Step 5
    Spoon steamed rice and chicken mixture into serving bowls. Dollop with sour cream and serve with corn chips.
