Ingredients

  • 450 g marshmallows small
  • 910 g icing sugar
  • 2 tbs vanilla essence
  • 1 tbs butter essence
  • 1 tbs almond essence
  • 1 tsp shortening

Method

  • Step 1
    Place marshmallows in a large microwave-safe bowl and microwave on high for 1 minute until the marshmallows are melted. The marshmallows will swell when melted.

    Place essences with marshmallows, and stir to smooth and blend mixture.

  • Step 3
    Grease the bowl and beaters of a mixer well with shortening.
  • Step 4
    Place ¾ of the icing sugar in the mixer bowl and add the melted marshmallows.

  • Step 5
    Mix on low speed for a few minutes, then check the consistency of the fondant. If sticky, add some of the remaining icing sugar and mix again for a minute or so.

    Repeat this step until the fondant is firm and not sticky.
  • Step 7
    Place fondant on a greased work surface and knead with greased hands for a few minutes until fondant is smooth.

    Wrap in plastic wrap and rest for at least 30 minutes before using.
