Seriously everyone's favourite cake that comes out of my kitchen. I always look out for when Mars Bars are on special and tuck them away for this cake. You can never have too many Mars Bars!

- 400 g dark chocolate chopped
- 1/2 cup cocoa powder
- 1 3/4 cups caster sugar
- 6 eggs lightly beaten
- 1 1/2 cups self-raising flour
- 4 x 53 g Mars Mars Bar chilled chopped
Method
-
Step 1Preheat oven to 160C (140C fan-forced). Grease and line a deep 22 cm x 28 cm slab pan.
-
Step 2Melt butter and chocolate together in large bowl in microwave on 70% for 3-4 minutes, stirring with a metal spoon every minute until almost smooth.
-
Step 3Add cocoa and whisk until smooth, add sugar and mix well.
-
Step 4Add half of egg mixture, stir to combine, repeat.
-
Step 5Sift flour over mixture, stir gently until just combined.
-
Step 6Pour into prepared pan.
-
Step 7Arrange chopped Mars Bars over cake batter and press in slightly.
-
Step 8Bake for 60-65 minutes or until a skewer inserted off centre has moist crumbs clinging to it. Cool completely in pan, then cut into squares.

Recipe Notes
212g Mars Bars = 4 x 53g bars.
Dust with icing sugar to "pretty" it up, and serve with double thick cream, or some good vanilla ice cream.
