Have a very Aussie Christmas with this classic Christmas cake dotted with delicious macadamia nuts.
Ingredients
Christmas cake
- 375 g Sunbeam sultanas
- 375 g Sunbeam mixed fruit
- 1/2 cup rum
- 250 g butter
- 1 cup brown sugar firmly packed
- 4 eggs
- 100 g dark chocolate melted
- 1 cup plain flour
- 2 tsp ground ginger
- 2 tsp ground cinnamon
- 2 cups Sunbeam macadamias halved
Method

Step 1Combine sultanas, mixed fruit and rum in a large bowl. Cover and allow to stand overnight.

Step 2Preheat oven to 140°C. Line the base and sides of a 20cm deep square cake tin with a double layer of baking paper.

Step 3Beat butter and brown sugar until light and creamy. Add eggs, one at a time, beating well after each addition. Add melted chocolate and beat until combined. Stir butter mixture into soaked fruit.

Step 4Blend 1 cup of Macadamia nuts in a food processor until smooth, to make a meal.

Step 5Sift plain flour, ginger and cinnamon onto fruit mixture, add macadamia meal and nuts and stir until combined.

Step 6Pour into tin and level the top. Bake for 1½ - 1¾ hours or until a skewer inserted in the centre of cake comes out clean.
Recipe Notes
Tip : decorate with melted chocolate and remaining macadamia halves.
