A quick, low-fat butter chicken that the whole family will love! Once you have stocked up on your spices for this recipe, it becomes an easy weekly favourite.
Ingredients
- 800 g chicken breasts skin off
- 1 brown onion finely chopped large
- 1 garlic clove crushed
- 1/2 tsp ginger
- 1 tsp ground cinnamon
- 1 tsp mild sweet paprika
- 1/4 tsp chilli powder as desired
- 1 cup chicken stock (liquid)
- 2 tbs tomato paste
- 375 ml light evaporated milk
- 1 tbs cornflour
- 1 tsp ground turmeric
- 1/2 tsp ground cumin
Method

Step 1Cook chicken until lightly brown, then remove from pan.

Step 2Cook onion for 5 minutes until softened.

Step 3Add garlic, ginger and spices to onion and cook for a minute until fragrant.

Step 4Return chicken to pan and add stock, tomato paste and evaporated milk.

Step 5Combine cornflour with a little water to make a smooth paste and add to the chicken mixture.

Step 6Bring mixture to the boil. Reduce heat to low and simmer, uncovered, for 10 minutes or until the chicken is cooked through.

Step 7Serve with rice.
