Lemon and Lime Fish Fillets

This is a really healthy, fish dish, so don't feel guilty about the oven-baked hot chips on the side! Leave the fish in the foil when serving if you'd prefer the juices to stay put. - Kaz

Ingredients

  • 2 white fish fillets deboned
  • 1 lime juiced zested
  • 1 lemon juiced zested
  • 2 pinches salt
  • 2 pinches pepper
  • 2 tbs fresh dill chopped
  • 1 garlic clove crushed large
  • 2 splashes extra light olive oil

Method

  • Step 1
    Preheat oven to 220C.
  • Step 2
    Lay out two sheets of aluminium foil and place the fish fillets on them.

  • Step 3
    Cover each evenly with the other ingredients.
  • Step 4
    Close up the foil so nothing can spill out during cooking.
  • Step 5
    Place fish packages on a baking tray and heat in the oven for 15 minutes, maximum.
  • Step 6
    Remove from oven and allow to sit for a couple of minutes before serving.
  • Step 7
    Serve with hot chips and/or salad.

  • 1 baking tray
Recipe Notes

I use perch in this recipe, about 200g each piece.

You could also do this on the BBQ or under the grill.
