Delicious and light.
Ingredients
- 2 cups Granita biscuits crushed
- 90 g butter
- 2 tsp hot water
Filling
- 1 tbs gelatine powder
- 1/4 cup hot water
- 250 g cream cheese softened
- 1 tsp vanilla essence
- 1/2 lemon rind juiced
- 310 g canned mandarin
- 2 egg whites
- 1/2 cup caster sugar
Method

Step 1Base: Combine biscuit crumbs with hot water and butter.

Step 2Press mixture into pie plate or spring form pan.

Step 3Filling: Dissolve gelatine in hot water.

Step 4Beat softened cream cheese until smooth.

Step 5Gradually add sugar, gelatine, vanilla essence and lemon rind.

Step 6Make lemon juice up to ½ cup with juice from the mandarins.

Step 7Add liquid to cream cheese mixture and blend well.

Step 8Beat egg whites until stiff and fold into cheese. Add mandarins.

Step 9Pour into crumb-crust and chill until firm.

Step 10Decorate as desired.
Recipe Notes
I buy 2 cans of mandarins and use 1 can (drained) to decorate the top of the cheesecake.
Other fruit can also be used.
