Ingredients

  • 250 g caster sugar
  • 2 lemons juiced zested
  • 4 eggs whole
  • 250 ml double cream
  • 1 tbs icing sugar *to decorate

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Combine the eggs, caster sugar, cream, lemon zest and lemon juice in a mixing bowl.
  • Step 3
    Pour the mixture into the pastry flan.
  • Step 4
    Bake for 30-40 minutes.
  • Step 5
    Once baked, remove from the oven and allow to cool.
  • Step 6
    Serve with a dusting of icing sugar and a dollop of cream.
Recipe Notes

You'll need a 23cm sweet flan pastry case.

I find it easier when filling the pastry shell to put it on the oven shelf first and then pour in the mixture. Less mess on your kitchen floor that way.
