Something for the lemon-holics.
Ingredients
- 250 g caster sugar
- 2 lemons juiced zested
- 4 eggs whole
- 250 ml double cream
- 1 tbs icing sugar *to decorate
Method

Step 1Preheat oven to 180C.

Step 2Combine the eggs, caster sugar, cream, lemon zest and lemon juice in a mixing bowl.

Step 3Pour the mixture into the pastry flan.

Step 4Bake for 30-40 minutes.

Step 5Once baked, remove from the oven and allow to cool.

Step 6Serve with a dusting of icing sugar and a dollop of cream.
Recipe Notes
You'll need a 23cm sweet flan pastry case.
I find it easier when filling the pastry shell to put it on the oven shelf first and then pour in the mixture. Less mess on your kitchen floor that way.
