Drizzle this homemade, zesty preserve over pavlovas, cupcakes, tarts and cakes.
Ingredients
- 4 egg yolks
- 1/2 cup caster sugar
- 50ml lemon juice
- 3 passionfruit pulp removed
- 80g unsalted butter chopped
Method

Step 1In a medium saucepan, whisk together yolks and sugar. Add lemon juice and passionfruit pulp, and stir to combine.

Step 2Place pan over a medium-low heat and cook for approximately 10 minutes, stirring regularly, until thickened.

Step 3Remove pan from heat, add butter and stir until melted and fully incorporated.

Step 4Pour into a 250ml sterilised jar, seal and set aside to cool.

Step 5Store in the fridge for up to two weeks.
