Ingredients

  • 4 egg yolks
  • 1/2 cup caster sugar
  • 50ml lemon juice
  • 3 passionfruit pulp removed
  • 80g unsalted butter chopped

Method

  • Step 1
    In a medium saucepan, whisk together yolks and sugar. Add lemon juice and passionfruit pulp, and stir to combine.

    Place pan over a medium-low heat and cook for approximately 10 minutes, stirring regularly, until thickened.
  • Step 3
    Remove pan from heat, add butter and stir until melted and fully incorporated.
  • Step 4
    Pour into a 250ml sterilised jar, seal and set aside to cool.
  • Step 5
    Store in the fridge for up to two weeks.
