Rocky road makes the perfect addition to your dessert table on Christmas Day. It’s also a great homemade gift idea that can be whipped up in a flash.
Ingredients
- 500g CADBURY Baking Milk Chocolate Melts
- 20g coconut oil
- 300g Cadbury Clinkers cut in half
- 100g marshmallows cut in half
- 200g raspberry lollies cut in half
Method

Step 1Line the base and sides of a 16.5 x 26cm lamington pan with baking paper.

Step 2Chop the Clinkers, marshmallows and raspberry lollies in half and set aside.

Step 3Place the chocolate and coconut oil or copha into a heatproof, microwave-safe bowl.

Step 4Heat, uncovered, on Medium, stirring every minute with a metal spoon for 4-5 minutes, or until the chocolate and coconut oil/copha has just melted.

Step 5Remove from the microwave and stir until smooth.

Step 6Stir through the Clinkers, marshmallows and raspberry lollies.

Step 7Spread the mixture into the prepared lamington pan and place in the fridge for 2 hours, or until completely set.

Step 8Use a sharp knife to cut into slices (if you are having trouble cutting the slice, run your knife under hot water first and then dry completely before cutting - the heat will help to cut the slice evenly).

Recipe Notes
If you can’t buy Clinkers then you can substitute with any type of chopped nuts, chocolate coated peanuts, roughly chopped plain biscuits or chopped Turkish Delight.
You can swap milk chocolate melts for white or dark chocolate melts.
You can swap coconut oil for copha.
