Christmas Cake Balls

These are so moreish, and the family love them so much we don't have Christmas cake anymore; we just make these. Like a bit-sized Christmas cake morsel, these balls combine all the best festive flavours: think rum, orange, dark chocolate and rich fruit cake. And, they make excellent edible Christmas gifts. - Flic

Ingredients

  • 800 g dark fruit cake
  • 250 g dark chocolate
  • 125 g butter
  • 2 tbs rum
  • 1 orange zested *optional

Icing

  • 250 g dark chocolate
  • 40 silver cachous

Method

  • Step 1
    Melt the butter and chocolate in a bowl over hot water.
  • Step 2
    Crumble the fruit cake into a large bowl.
  • Step 3
    Add the rum and mix it through.
  • Step 4
    Stir in melted butter and chocolate mixture until it is combined and pour it into the cake mixture. Mix well until all is combined.
  • Step 5
    Line baking trays with greaseproof paper. Roll a teaspoon of the mixture into a ball, place on trays.
  • Step 6
    Continue until all the mixture is used up.
  • Step 7
    Refrigerate for 1-2 hours to set.
  • Step 8
    Make white glace icing or melt chocolate. Ice the balls, allowing the icing/chocolate to trickle down the sides.
  • Step 9
    Put a small piece of glace cherry or a silver cachou on top of each one and return to the refrigerator to set.

Are there any tips for making the best christmas cake balls?

If you'd like to add extra citrus oomph, try adding some finely chopped citrus peel, or some orange zest. To finish the balls, you could use white glace icing or dark chocolate, and decorate with silver cachous or glace cherries. And, if left for a day or two it gives the flavour time to develop. Just be sure to keep them in the fridge.

What can you use instead of rum in Christmas cake balls?

You can swap out rum for brandy for a similarly festive flavour, or even orange juice for non-alcoholic Christmas cake balls.
