Ingredients

  • 3 cup plain flour
  • 2 cup sugar
  • 1 1/2 tsp bicarbonate of soda
  • 1 tsp salt
  • 2 cup carrot grated peeled
  • 450 g (crushed) canned pineapple
  • 1 1/2 cup sunflower oil
  • 4 egg
  • 1 cup pecans

Method

  • Step 1
    Sift dry ingredients into a bowl.
  • Step 2
    Add carrot, undrained pineapple, oil, eggs and pecans.
  • Step 3
    Mix well.
  • Step 4
    Pour into a greased and lined lamington pan.
  • Step 5
    Bake at 180C for approximately 50 minutes or until cooked.

Equipment

  • 1 lamington pan
Recipe Notes
Ice with any icing you like (I love the cream cheese icing).
