An easy all in one bowl recipe. Very moist and delicious.
Ingredients
- 3 cup plain flour
- 2 cup sugar
- 1 1/2 tsp bicarbonate of soda
- 1 tsp salt
- 2 cup carrot grated peeled
- 450 g (crushed) canned pineapple
- 1 1/2 cup sunflower oil
- 4 egg
- 1 cup pecans
Method

Step 1Sift dry ingredients into a bowl.

Step 2Add carrot, undrained pineapple, oil, eggs and pecans.

Step 3Mix well.

Step 4Pour into a greased and lined lamington pan.

Step 5Bake at 180C for approximately 50 minutes or until cooked.

- 1 lamington pan

Ice with any icing you like (I love the cream cheese icing).
