Ingredients
- 1 tbs olive oil
- 20 g unsalted butter
- 500 g carrots thickly sliced
- 1 tbs white sugar
- 1 tbs parsley chopped fresh
- 2 tsp balsamic vinegar
Method

Step 1Heat oil and butter in saucepan, cook carrots, covered, over low heat until just tender.

Step 2Add sugar, stirring constantly, for approximately 10 minutes or until carrots caramelise.

Step 3Stir in parsley and vinegar.

Step 4Season with salt and pepper, to taste.
Recipe Notes
Substitute the olive oil for rice bran oil if desired.
If fresh parsley is unavailable, Gourmet Garden parsley herb blend is a good alternative.
The beauty with this dish is that it can be made several hours in advance and reheated just before serving.
