Ingredients

  • 1 tbs olive oil
  • 20 g unsalted butter
  • 500 g carrots thickly sliced
  • 1 tbs white sugar
  • 1 tbs parsley chopped fresh
  • 2 tsp balsamic vinegar

Method

  • Step 1
    Heat oil and butter in saucepan, cook carrots, covered, over low heat until just tender.
    Caramelised Carrots
  • Step 2
    Add sugar, stirring constantly, for approximately 10 minutes or until carrots caramelise.
  • Step 3
    Stir in parsley and vinegar.
  • Step 4
    Season with salt and pepper, to taste.
Recipe Notes

Substitute the olive oil for rice bran oil if desired.

If fresh parsley is unavailable, Gourmet Garden parsley herb blend is a good alternative.

The beauty with this dish is that it can be made several hours in advance and reheated just before serving.
