How to make cafe choc-chip cookies: key tips
Simply cream some butter (ensure it is softened first) and sugar until the mixture is light and fluffy and then beat in the sweetened condensed milk, followed by the remaining ingredients.
When arranging your cookie dough balls on the lined baking trays, make sure you leave room for spreading.
Bake your cookies, 2 baking trays at a time, swapping the trays halfway through cooking, for 12-15 minutes or until lightly golden. Cool slightly on the trays before transferring the biscuits to a wire rack to cool completely.

The sweetened condensed milk takes the place of the vanilla and eggs in this cookie recipe, giving the cookies and creamy, slightly caramel flavour.

Ingredients
- 180 g butter softened
- 1/3 cup Woolworths Essentials Caster Sugar
- 125 ml sweetened condensed milk
- 1 1/2 cups self-raising flour
- 250 g dark choc bits

Step 1Preheat oven to 180C. Using an electric mixer, beat the butter and sugar together until light and creamy. Beat in condensed milk.

Step 2Add the flour and mix on low speed until smooth. Stir in the choc bits until well combined.

Step 3Roll about 2 teaspoonfuls of the mixture into balls and place on baking paper lined trays. Press each ball with a floured fork.

Step 4Bake for 12 - 15 minutes or until lightly golden. Remove from oven and allow to cool on the trays. Store in airtight containers.

Why aren’t my cookies spreading?
Your cookies won't spread properly if your oven temperature is too high. The edges will cook faster than the centres, which will prevent them from spreading out. Stick to a moderate oven temp of 180C fan forced and you shouldn’t have a problem.
Can I freeze these cafe choc-chip cookies?
Amazingly, yes! Cool the cookies, then place them in an airtight container or sealable bag. Freeze for up to 2 months and then thaw at room temperature for about 15 minutes when ready to serve. Be sure to let the cookies cool completely before freezing in order to prevent condensation and freezer burn.
