Very tasty muffins that make a great snack, best made with fresh blueberries.
Ingredients
- 1 1/2 cups self-raising flour sifted
- 1/2 cup brown sugar
- 3/4 cup fresh blueberries
- 1 egg lightly beaten
- 3/4 cup milk
- 90 g butter melted
- 1 tsp lime rind grated optional
Method

Step 1Mix flour, sugar and blueberries in a bowl. In a separate bowl lightly whisk egg, milk and butter together.

Step 2Pour the liquid ingredients into the flour and stir with a spoon until ingredients are just combined, do not over mix.

Step 3Spray muffin pans with cooking spray and fill muffin pans with mixture, level with the top.

Step 4Bake at 200C for 15 minutes, until muffins spring back when lightly touched.

Step 5Allow to cool for 5 minutes on a wire rack.
Recipe Notes
Don't over mix the muffins or the may become tough and rubbery.
Best eaten same day made but will store in an airtight container for a couple of days.
