A budget-friendly tasty casserole made with beef mince and frozen vegies.
Ingredients
- 500g beef mince
- 1 onion
- 1 tsp garlic
- 425g canned corn
- 1 carrot diced
- 1 zucchini sliced
- 1 cup water
- 2 beef stock cubes
- 425g canned chopped tomatoes
- 450g frozen spinach
- 3 potatoes thinly sliced
- 1 cup cheese grated
- 1/2 cup cream
Method

Step 1Fry beef, onion and garlic until cooked.

Step 2Add carrot, corn, zucchini, water, stock cubes and tomatoes.

Step 3Simmer for 20 minutes, or until vegetables are cooked.

Step 4Place spinach in a microwave dish and cook for 5 minutes on high, then drain.

Step 5Peel and slice potatoes, set aside.

Step 6Grease a deep casserole dish and pour half of the beef mixture into the dish.

Step 7Place half of the spinach over the beef and then spread the sliced potatoes over the spinach, followed by half of the cheese.

Step 8Repeat steps, but finish with the cream and cheese on top.

Step 9Cook at 180C for 45 minutes.

- 1 casserole dish
Recipe Notes
Put a tray under the casserole dish if it is not deep enough to catch any spills.
