BBQ chicken skewers with rice noodle salad makes the perfect light and fresh summer dinner! You'll have this on the table in 20 minutes, and the whole family will love you for it!
Ingredients
- 8 BBQ chicken kebabs
- 200 g rice noodles
- 250 g cherry tomato halved
- 2 Lebanese cucumber chopped
- 200 g snow peas
- 1 lime cut into wedges
- 1/4 cup roasted peanuts
- 60 ml fish sauce
- 80 ml lime juice
- 2 tbs sweet chilli sauce
- 3 tbs brown sugar
Method

Step 1Cook the chicken skewers on the BBQ.

Step 2Cook the rice noodles according to the packet instructions. Drain the rice noodles and rinse under cold water. Place the noodles into a large bowl.

Step 3Add the chopped vegetables to cooked rice noodles with two thirds of the dressing. Mix well.

Step 4Place onto serving plates and top with the cooked chicken skewers, peanuts, lime wedges and the remaining dressing.
