A different breakfast version of the old favourite porridge.
Ingredients
- 2 cups rolled oats
- 1 pinch salt
- 1/4 tsp nutmeg
- 1/4 tsp ground cinnamon
- 1/2 tsp vanilla essence
- 2 cups milk
- 1 egg
- 1 banana sliced
- 1/2 cup fresh mixed fruit
- 1 tsp vanilla essence
- 1/4 cup walnuts
- 3 tbs honey
Method

Step 1Combine oats, salt, nutmeg, cinnamon and nuts in a small bowl.

Step 2Slice banana into base of 23 cm x 30 cm baking tray.

Step 3Arrange your choice of mixed fruit over the bananas.

Step 4Sprinkle oat mixture over mixed fruit.

Step 5Drizzle honey evenly over oat mixture.

Step 6Whisk together milk, egg and vanilla.

Step 7Pour over oats and tap baking tray gently to settle ingredients.

Step 8Bake at 180C for 30-40 minutes.

Step 9Stand for 5 minutes before serving.
Recipe Notes
Delicious served with fresh fruit of choice such as strawberries and banana.
Add a dollop of yoghurt and some extra milk and it will keep you satisfied until lunch time.
You can use any combination of fresh or frozen fruit, like strawberries, blueberries etc. You can also use nuts like walnuts or almonds.
