Ingredients

  • 2 cups rolled oats
  • 1 pinch salt
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cinnamon
  • 1/2 tsp vanilla essence
  • 2 cups milk
  • 1 egg
  • 1 banana sliced
  • 1/2 cup fresh mixed fruit
  • 1 tsp vanilla essence
  • 1/4 cup walnuts
  • 3 tbs honey

Method

  • Step 1
    Combine oats, salt, nutmeg, cinnamon and nuts in a small bowl.
  • Step 2
    Slice banana into base of 23 cm x 30 cm baking tray.
  • Step 3
    Arrange your choice of mixed fruit over the bananas.
  • Step 4
    Sprinkle oat mixture over mixed fruit.
  • Step 5
    Drizzle honey evenly over oat mixture.
  • Step 6
    Whisk together milk, egg and vanilla.
  • Step 7
    Pour over oats and tap baking tray gently to settle ingredients.
  • Step 8
    Bake at 180C for 30-40 minutes.
  • Step 9
    Stand for 5 minutes before serving.
Recipe Notes

Delicious served with fresh fruit of choice such as strawberries and banana.

Add a dollop of yoghurt and some extra milk and it will keep you satisfied until lunch time.

You can use any combination of fresh or frozen fruit, like strawberries, blueberries etc. You can also use nuts like walnuts or almonds.
