Ingredients
- 4 potatoes cubed large
- 370 g mayonnaise
- 300 g bacon rashers diced *to taste
- 100 g pancetta diced
Method

Step 1Boil potato until just tender. Drain and cool under cold water for 30 seconds.

Step 2Refrigerate until cool.

Step 3Meanwhile, cook the bacon and pancetta as desired and set aside.

Step 4Add the mayonnaise and bacon mixture to the potatoes and mix through.

Step 5Cover and refrigerate for at least 1 hour.
Recipe Notes
I prefer to use Perinaise, or add a few drops of peri-peri to the mayonnaise.
