Ingredients

  • 1/2 bunch mint leaves only
  • 1 bunch coriander leaves only
  • 1 handful watercress leaves only
  • 1 handful mache rosette leaves
  • 1 avocados sliced
  • 1 pomegranate, seeds removed
  • 1 cup walnuts roughly chopped

Dressing

  • 1/2 avocado ripe
  • 1 tsp seeded mustard
  • 2 tbs lemon juice
  • 6 tbs olive oil
  • 1 splash apple cider vinegar
  • 1 pinch sea salt
  • 1 pinch black pepper

Method

  • Step 1
    Combine all the ingredients for the salad in a large bowl.
  • Step 2
    Place all the ingredients for the dressing in a blender or food processor and process for 20-30 seconds or until you reach a smooth consistency.
Recipe Notes

You can replace watercress with rocket leaves, and olive oil for avocado oil.
