Can eat as a snack, they're great for entertaining, or can combine and make as a family size pie.
Ingredients
- 125 g asparagus cut into pieces
- 3 bacon rashers diced fat trimmed
- 1 onion diced medium
- 125 g cream cheese
- 1 pinch salt and pepper *to taste
- 1 loaf bread crusts removed
- 1 pinch mixed herbs *to taste
Method

Step 1Roll out bread slices flat, then fold into muffin trays.

Step 2Bake at 180C until slightly brown.

Step 3Soften cream cheese slightly.

Step 4In a bowl, mix the cream cheese, onion, bacon and asparagus to form a smooth consistency.

Step 5Spoon mixture into bread cases and sprinkle with mixed herbs.

Step 6Bake for approximately 10-15 minutes until golden brown, taking care not to burn bread cases.

Step 7Serve immediately or can be served cold with salad.
Recipe Notes
For a vegetarian option, omit bacon and replace with corn kernels.
Can use the bread crusts for breadcrumbs, or you can freeze them.
