I love my Asian potsticker stir-fry, because it's a low calorie meal that I can prepare in less than half an hour on a busy weeknight. By substituting frozen potstickers for the usual chicken or beef, the recipe feels special like Asian takeaway, but is actually easier because you don't have to worry about thawing the meat, or stopping at the grocery store to buy it fresh. Though this is my favourite combination of ingredients, I can toss in any veggie I have on hand and it will still taste delicious; it's definitely my go-to when I want to have a quick and tasty meal!
Ingredients
- 3 cup rice cooked
- 2 tbs olive oil
- 1 cup sugar snap peas
- 1 red capsicum sliced small
- 227 g canned water chestnut sliced
- 3 tbs spring onion
- 215 g frozen pork potstickers
- 3/4 cup teriyaki stir fry sauce
- 1 pinch salt *to taste
- 1 pinch black pepper
Method

Step 1Heat 1 tbs oil in medium frying pan to medium heat. Heat 1 tbs oil in large frying pan on another burner to medium heat.

Step 2Bring a pot of water to the boil and cook rice according to package instructions.

Step 3Add sugar snap peas and red capsicum to the medium skillet and stir occasionally.

Step 4Add potstickers to the large skillet and begin to sauté for 5-7 minutes until golden brown, turning occasionally to brown evenly. Most potstickers require 2 tbsp. of water after they have been sautéed to steam and soften the center. Add this if required by package instructions; if not, continue cooking potstickers to package instructions.

Step 5After rice and peas have cooked for about 4 minutes and begin to soften slightly, add water chestnuts and sprinkle with salt, pepper and red pepper flakes. Cook 1 additional minute.

Step 6Add stir fry sauce and turn heat to low; simmer veggies in the sauce until the rice and potstickers are ready.

Step 7Place rice in the center of each plate and top with the veggie mixture and potstickers. Garnish with a sprinkle of spring onions and serve immediately.
Recipe Notes
To make serve a family of 4-6, double all ingredients and prepare using the same instructions. Potstickers are also known as gyoza. I recommend using Annie Chung's brand.
