Delicious Asian chicken noodle soup with vegetables.
Ingredients
- 70 ml reduced-salt soy sauce
- 1 tbs vegetable oil
- 500 g (fillets) chicken thighs trimmed
- 2 cup boiling water
- 1 cup bean sprouts
- 1 bunch baby choy sum trimmed washed
- 1.5L Massel* Chicken Style Liquid Stock
- 600 g ramen noodles
- 3 long green shallots thinly sliced
- 2 fresh red chilli small thinly sliced

Method

Step 1Preheat chargrill or grill on medium-high.

Step 2Chop shallots and chillies and set aside.

Step 3Combine 1 tablespoon of soy sauce with vegetable oil and brush chicken with soy mixture.

Step 4Cook chicken under preheated grill for 3-4 minutes each side, occasionally brushing with soy mixture.

Step 5Set aside when cooked and keep warm.

Step 6Pour 1 cup of boiling water over bean sprouts and stand for 1 minute, then drain.

Step 7Pour 1 cup of boiling water into saucepan, add choy sum stirring constantly for 1-2 minutes until wilted.

Step 8Drain and set aside.

Step 9Pour all chicken stock into saucepan with 1 tablespoon of soy sauce.

Step 10Bring mixture to boil and then add ramen noodles. Cook for 1-2 minutes stirring often.

Step 11Cut chicken across the grain into medium slices.

Step 12Transfer noodles from the broth into a large serving bowl. Arrange chicken, bean sprouts, shallots, chillies and choy sum on top of noodles.

Step 13Pour broth over to serve.
