Ingredients

  • 70 ml reduced-salt soy sauce
  • 1 tbs vegetable oil
  • 500 g (fillets) chicken thighs trimmed
  • 2 cup boiling water
  • 1 cup bean sprouts
  • 1 bunch baby choy sum trimmed washed
  • 1.5L Massel* Chicken Style Liquid Stock
  • 600 g ramen noodles
  • 3 long green shallots thinly sliced
  • 2 fresh red chilli small thinly sliced

Method

  • Step 1
    Preheat chargrill or grill on medium-high.
  • Step 2
    Chop shallots and chillies and set aside.

    Combine 1 tablespoon of soy sauce with vegetable oil and brush chicken with soy mixture.
  • Step 4
    Cook chicken under preheated grill for 3-4 minutes each side, occasionally brushing with soy mixture.
  • Step 5
    Set aside when cooked and keep warm.
  • Step 6
    Pour 1 cup of boiling water over bean sprouts and stand for 1 minute, then drain.
  • Step 7
    Pour 1 cup of boiling water into saucepan, add choy sum stirring constantly for 1-2 minutes until wilted.
  • Step 8
    Drain and set aside.
  • Step 9
    Pour all chicken stock into saucepan with 1 tablespoon of soy sauce.
  • Step 10
    Bring mixture to boil and then add ramen noodles. Cook for 1-2 minutes stirring often.
  • Step 11
    Cut chicken across the grain into medium slices.
  • Step 12
    Transfer noodles from the broth into a large serving bowl. Arrange chicken, bean sprouts, shallots, chillies and choy sum on top of noodles.
  • Step 13
    Pour broth over to serve.
