This recipe is made with sweet Canadian pastry. Great for picnics, lunch at the beach or when friends visit.
Ingredients
Pastry
- 500 g plain flour
- 125 g lard
- 125 g butter
- 1 egg
- 15 ml malt vinegar
- 25 g brown sugar
- 1 iced water
Filling
- 500 g apple
- 15 ml water
- 1 sugar *to taste
- 1 tbs milk
Method

Step 1Filling: Peel, core and slice the apples.

Step 2Place in a saucepan with about 15ml of water, and cook, covered, for 10-15 minutes until soft.

Step 3Add sugar. Set aside to cool.

Step 4Pastry: Rub lard into flour until it looks like breadcrumbs.

Step 5Add the sugar and mix.

Step 6Beat together the egg, vinegar and water.

Step 7Add to the flour mixture, a little at a time.

Step 8Gather together with a knife until a paste is formed.

Step 9Turn onto a floured pastry board. Knead lightly. Wrap in foil or cling wrap and put in the refrigerator for about 30 minutes to chill.

Step 10Divide dough into two. Knead lightly and form it into a ball.

Step 11Roll out to about 5mm.

Step 12Line pie plate with the pastry and trim. Prick the pastry with a fork several times.

Step 13Place apples into the base. Moisten edge with a little milk.

Step 14Knead remaining pastry lightly and form into a ball.

Step 15Roll out slightly thicker than the base and cover the pie. Seal the edge of the pie and trim.

Step 16Brush with milk and sprinkle some extra sugar on top.

Step 17Bake at 175C in the centre of the oven for 30-40 minutes until golden brown and crisp.

Recipe Notes
I use soft flour for this recipe, if available.
Any sweet filling can be used with it e.g. blackberry and apple, cherry, mixed summer fruits and plum and almond.
I used white fat.
Serve hot or cold with custard, cream or ice cream.
