This is my Mum's apple pie and everyone comments on how delicious the pastry is. Beautiful served with custard or ice-cream.
Ingredients
- 6 apples cooked large
- 3/4 cup water
- 1 tbs sugar *to taste
Pastry
- 2 cups self-raising flour
- 125g butter
- 2 tbs sugar
- 1 egg
- 2 tbs water
Method

Step 1Peel and slice apples into a medium-sized pot with sugar and water.

Step 2Bring to boil and simmer until cooked. Drain and cool.

Step 3Sift flour into mixing bowl and add sugar and butter. Rub in with fingers until mixture resembles crumbs.

Step 4Add beaten egg and water.

Step 5Roll out half the mix with rolling pin adding flour as needed. Cover bottom of greased and floured pie dish with rolled out pastry, add apples and repeat with the rest of the pastry on the top.

Step 6Cut around edge of pie dish with a knife and press layers together with a floured fork. Brush with a little milk and sprinkle with caster sugar.

Step 7Bake at 180C (170C fan forced) for approximately 45-60 minutes until brown.

Recipe Notes
You can roll out the remainder of the pastry and spread with jam, roll up and cook with the pie. This makes a nice slice. Use butter or margarine.
For a quick solution, swap homemade pastry for 2-3 sheets of frozen sweet shortcrust pastry.
Editor's Note: We made our pie with a lattice top by cutting the pastry into long strips and laying them horizontally and vertically. Carefully weave the pastry strips under and over each other in a basket weave pattern.
