Lovely tasting gnocchi that are not heavy like the potato-based ones can be.
Ingredients
- 1 cup ricotta
- 1 cup plain flour
- 1 egg
Method

Step 1Mix all ingredients together until just combined.

Step 2Roll mixture into long sausage shape and chop into pieces approximately 2.5 cm in length.

Step 3Poke a small dimple in the ends using the end of a fork.

Step 4Boil gnocchi until they rise to the top.

Step 5Serve with sauce of choice.
Recipe Notes
I received this recipe from my friend Jodi, it was so fantastic I had to share. Can substitute low-fat ricotta to make it healthier. Can also add greens such as spinach for extra flavour. This can be made without the egg for those with egg allergies.
