Name a more iconic Aussie barbecue salad than the good ol’ potato salad. 

(You can’t). 

Tender potatoes and crunchy little bacon bits, bound together by cream that tastes way better than it has any right to, potato salad is the salad I’ll just keep going back for more and more of. 

I’m of the opinion there’s no such thing as a bad potato salad, but there certainly are ones that are just better than others. Like this one. 

Could this be our best potato salad?

There’s lots to love about this potato salad. 

Firstly, you’re only looking at six ingredients, many of which I’d be willing to bet you already have floating around in your kitchen. 

I don’t know about you, but at this time of year simplicity is a top priority in my world, and this potato salad delivers this in spades.

Then, you’ve got the preparation time. Just 30 minutes – and that’s INCLUDING cooking the potatoes. 

But perhaps my favourite part of this potato salad recipe is its secret ingredient. 

It might just be the cheapest recipe-making, flavour-enhancing ingredient, ever: cream of chicken soup mix.

Yep, you read that correctly.

The secret ingredient in this potato salad is a soup mix. 

And, goodness me, does it do some heavy lifting in the flavour department. It really packs a punch. It’s a little bit salty, a little bit umami and a lot yum.  

Australia’s Best Recipes member Ali also raves about it. 

In fact, she’s taken it a step further, replacing the chicken soup mix with a spring veg soup mix, confirming that it works a treat too!

Even those who aren’t big potato salad fans (weirdly, they do exist) rave about this potato salad.
