When the weekend rolls around, there’s no better way to kick back and set the tone than with a special breakfast. In our house, this means pikelets. 

And, in case you’re wondering, I firmly believe pikelets are superior to pancakes (always), and when it comes to recipes, this one is right up there as one of my faves. 

Why pikelets are the best

If you’re someone who believes that pancakes are better than pikelets, let me change your mind. 

Though you could argue pancakes and pikelets taste the same, the big difference is in the versatility.

Pikelets keep a bit better in the fridge, are easier to store, and fit WAY better into a lunch box (an important consideration for parents). This means you can just cook up a few extra, and you’re sorted for all upcoming snacking needs. 

Plus, they’re way easier to flip in the frying pan (I’ve had more pancake flipping disasters than I’d like to admit). 

Why this banana pikelets recipe is so good

This banana pikelets recipe really is fantastic. Firstly, it’s easy. So easy that I’m confident in saying your kids could join you in the kitchen. It can also be frozen, making it an awesome prep-ahead lunchbox snack. 

But, perhaps my favourite addition to this pikelet recipe is the bananas. They’re wholesome, taste great, and go so well with Nutella and cream (my preferred pikelets toppings).

The secret to the perfect pikelets

Are you striving to achieve the perfect pikelet, every single time? 

Well, the secret is in the flipping. You want to wait until the batter is slightly bubbling in the pan before giving it a flip. 

But note: you want those bubbles to be beginning to pop. Then – and only then – it’s time. 

Also, make sure your frying pan doesn’t get too hot, so you don’t end up with a burnt-on-the-outside and raw-on-the-inside situation. 

Pikelets vs pancakes: what’s the difference?

Simple answer? Pikelets are smaller. But, as is with most things, the answer can be more complicated. 

In general, both pancakes and pikelets use the same ingredients; however, often pancakes have extra stuff like bicarb soda to add an extra bit of fluffiness. 

You usually also wouldn’t serve pancakes cold like you would pikelets (but if you’re into that, I’m not here to yuck your yum). 

So, this weekend why not whip out the frying pan, and make an event of breakfast?
