Into the freezer

If you don't want to use your egg whites right away, you can freeze them instead. Drop one egg white into each section of an ice cube tray, cover in plastic wrap and add to the freezer. Once frozen, remove the cubes and store in a snap-lock bag for later use. When you're ready to use the egg whites, simply remove the required egg white cubes and defrost in the fridge.

Make a meringue or pavlova

Perhaps the greatest use for egg whites is the much-loved Australian pavlova. Glossy, elegant and oozing with marshmallow, few can resist this delicious dessert.
