Simple meringues
Ingredients
- 4 egg whites
- 220 g caster sugar
Method

Step 1Preheat oven to 150C.

Step 2Place egg whites in the bowl of an electric mixer and beat on low speed until the eggs are foamy and starting to bubble.

Step 3Increase speed to high for 2-3 minutes or until soft peaks form.

Step 4Add sugar, a tablespoon at a time, and continue to beat on high for 2-5 minutes or until the mixture is stiff and glossy.

Step 5Line a baking tray with non-stick baking paper.

Step 6Spoon or pipe mixture onto the tray. Make a well in the centre of each meringue if cases are required.

Step 7Reduce oven temperature to 140C and bake for 35-40 minutes.

Step 8Turn oven off and leave for 1 hour to dry out.

Step 9For crispy meringues, leave for 2-3 hours to dry out. Store in an airtight container for up to 1 day.
Recipe Notes
Prior to putting them onto a tray you can also add about 5 drops of red food colouring and half a cap of strawberry essence and mix well for strawberry meringues. You can also sprinkle 100 & 1000's prior to cooking. I have also tried peppermint essence in them with green colouring.
