A light biscuit with a lovely almond flavour.
Ingredients
- 500 g almond meal
- 400 g caster sugar
- 4 egg whites large
- 1/2 tsp lemon rind, finely grated
- 4 drops almond essence
- 1/2 cup glace cherries halved
- 50 g blanched almonds whole
Method

Step 1Beat the egg whites well.

Step 2Add all other ingredients, except cherries and whole almonds and combine.

Step 3Leave the mixture for two to six hours in the fridge.

Step 4Lightly knead the mixture until workable.

Step 5Roll into balls and place on a baking tray lined with baking paper.

Step 6Gently press a cherry or an almond on top of each biscuit.

Step 7Bake on lined trays at 190C for 15 to 20 minutes or until golden brown.

Step 8Place baking sheets on a wire rack to cool

Step 9When cool, carefully peel the paper off the backs of the biscuits and place on a rack to cool completely.

This recipe works best if the dough is prepared the night before. They have a lovely texture and flavour.
