Ingredients

  • 500 g almond meal
  • 400 g caster sugar
  • 4 egg whites large
  • 1/2 tsp lemon rind, finely grated
  • 4 drops almond essence
  • 1/2 cup glace cherries halved
  • 50 g blanched almonds whole

Method

  • Step 1
    Beat the egg whites well.
  • Step 2
    Add all other ingredients, except cherries and whole almonds and combine.
  • Step 3
    Leave the mixture for two to six hours in the fridge.
  • Step 4
    Lightly knead the mixture until workable.
  • Step 5
    Roll into balls and place on a baking tray lined with baking paper.
  • Step 6
    Gently press a cherry or an almond on top of each biscuit.
  • Step 7
    Bake on lined trays at 190C for 15 to 20 minutes or until golden brown.
  • Step 8
    Place baking sheets on a wire rack to cool
  • Step 9
    When cool, carefully peel the paper off the backs of the biscuits and place on a rack to cool completely.

This recipe works best if the dough is prepared the night before. They have a lovely texture and flavour.
