Step 1

Take any leftover day-old bread, ideally without seeds or grains, and cut off all the crusts. Cut the bread into large cubes.

Step 2

Place the bread into the food processor and using the pulse function, carefully pulverise the bread until you have a consistency you like. Be careful with this step to ensure you don’t over-process the bread, otherwise you’ll end up with breadcrumbs that are too fine.

Step 3

Either use immediately, or place your breadcrumbs into snaplock bags and store in the freezer for up to three months. Before use, defrost in the fridge. This way you’ll never run out of delicious breadcrumbs again.

Flavourful additions

Pump up the flavour of your breadcrumbs and add some additions to them:

  • Smoked paprika, cumin, ground coriander or ground allspice are all delicious additions.
  • Crumble your favourite dried herbs into the breadcrumbs.
  • Grate hard cheeses, such as parmesan and pecorino into the breadcrumbs.
  • Sprinkle a teaspoon of grated lime, lemon or orange zest through your breadcrumbs.
  • Use a variety of flavoured salts, including smoked salts, to season the breadcrumbs.
  • Add a teaspoon of your favourite curry powder to the breadcrumbs, which will give them a great colour as well as flavour.
  • Ground chilli will give a kick to your breadcrumbs.
  • Instead of adding fresh garlic or onion, add garlic powder and dried onion flakes to flavour the breadcrumbs.
