Ingredients

  • 1 packs Steggles Turkey Shortcuts turkey breast fillets
  • 2 cup panko dried breadcrumbs
  • 2 tbs fresh lemon thyme finely chopped
  • 2 tbs parsley finely chopped
  • 1/3 cup plain flour
  • 1 tsp ground white pepper
  • 1 egg
  • 1 part mixed vegetables steamed *to serve

Method

  • Step 1
    Preheat oven to 180C (160C fan-forced).
  • Step 2
    Slice turkey breasts lengthways to make 3 fillets per breast.
  • Step 3
    In a bowl, combine breadcrumbs and herbs. Combine flour and pepper on a plate. Whisk the egg in a shallow bowl.
  • Step 4
    Lightly coat fillets in seasoned flour, dip into beaten egg and then coat in breadcrumb mixture, pressing on the crumbs with fingertips.
  • Step 5
    Place onto lined baking trays and lightly spray with olive oil.
  • Step 6
    Bake for 25 minutes until lightly golden and cooked.
  • Step 7
    Serve with steamed seasonal vegetables and lemon wedges.
