Serve these crumbed schnitzels with steamed veggies for a healthy meal.
Ingredients
- 1 packs Steggles Turkey Shortcuts turkey breast fillets
- 2 cup panko dried breadcrumbs
- 2 tbs fresh lemon thyme finely chopped
- 2 tbs parsley finely chopped
- 1/3 cup plain flour
- 1 tsp ground white pepper
- 1 egg
- 1 part mixed vegetables steamed *to serve
Method

Step 1Preheat oven to 180C (160C fan-forced).

Step 2Slice turkey breasts lengthways to make 3 fillets per breast.

Step 3In a bowl, combine breadcrumbs and herbs. Combine flour and pepper on a plate. Whisk the egg in a shallow bowl.

Step 4Lightly coat fillets in seasoned flour, dip into beaten egg and then coat in breadcrumb mixture, pressing on the crumbs with fingertips.

Step 5Place onto lined baking trays and lightly spray with olive oil.

Step 6Bake for 25 minutes until lightly golden and cooked.

Step 7Serve with steamed seasonal vegetables and lemon wedges.
